Film: Tour de chanson

Watch our short film with Matthias Kadar and Hans Flupsen. They talk about our next programme, Tour de chanson. The chansons of Matthias Kadar tell his personal life-story. He sings them in the four languages that sum up the course of his life: German, French, Hungarian and Dutch. In collaboration with the Nederlands Kamerkoor he presents his own work and arrangements of existing chansons. He confronts us with Schubert as a chansonnier and Brel as a composer of lieder. And this time we provide a special recipe for Hungarian körözött ánd mousse-au-chocolat!

Körözött - Hungarian feta cheese spread

Ingredients
fresh feta cheese
dijon mustard
cumin seeds
ground paprika (mild)
lots of chives
unsalted butter

Method
Put the feta cheese in a dish and crumble into little pieces. Add a good nob of butter, a spoonfull of mustard and one of cumin seeds, lots of ground paprika and lots of finely chopped chives. Mash together well with a fork. Add, if necessary, more paprika, the mixture should have a nice orange colour. Lovely on fresh baguette!

Real Mousse-au-chocolate

Ingredients
1 tablet of the darkest chocolate possible (80% or more)
4 eggs
space in your refrigerator

Method
Melt the chocolate in a double boiler.
Split the eggs. Stir the egg yolks well. Whisk the whites into soft peaks (make sure your bowl and whisk are absolutely fat free. Also make sure there is no trace of yolk in the whites.)
Leave the chocolate to cool a little. Stir in the yolks.
Carefully fold the whites through the mixture, mix well.
Leave to set in the fridge for at least 3-4 hours.

Serve with apple pie, or with a bit of rum martinique poured over it.
